Rajasthan contributes over a million tonnes to India's seed-spice output, led by coriander, cumin and fennel. Fennel shares the same growing calendar and much of the same trade infrastructure as cumin, including the Unjha yards.

The grade is visual. Buyers pay for green — a bright, unfaded seed that has been dried in shade rather than direct sun and cleaned without bruising. A lot that has yellowed loses its premium regardless of how it tastes.

Its two markets barely overlap. One is culinary, into blends and bakery. The other is mouth-freshener and confectionery, where appearance carries most of the value.
