Kashmir Mongra Saffron

Kashmir saffron is grown almost entirely on the Karewas — ancient elevated lake-bed deposits around Pampore in south Kashmir, roughly 3,700 hectares of them. The soil is mineral-rich, loamy and free-draining, which is the specific condition the corm requires.

In 2020 the Government of India certified Kashmir Valley saffron with a Geographical Indication. The recognised characteristics are longer and thicker stigmas, a natural deep-red colour, high aroma, bitter flavour, chemical-free processing, and high quantities of crocin, safranal and picrocrocin.

Grading is simple and absolute. Mongra is stigma alone — hand-detached crimson tips with no style attached. Lachha is stigmas still joined to parts of the style. Adulteration is the standing risk in this trade: high-grade Kashmiri saffron is often cut with cheaper imports and sold on as pure, which is why lot-level provenance matters more here than anywhere else on this list.
